Rooibos (pronounced ROY-boss) is the evening person's tea. Naturally free of caffeine, rich in antioxidants, and smooth enough to drink plain, it comes from a single plant grown in a single place: the Cederberg mountains of South Africa. What is rooibos?

Rooibos, or "red bush," is made from the needle-like leaves of Aspalathus linearis, a shrub in the legume family. The leaves are bruised and oxidized, which turns them a deep red-brown and develops their naturally sweet, nutty, slightly woody flavor. Unlike true teas, rooibos contains no caffeine at all, not just less.

The South African story

The Indigenous Khoisan peoples of the Cederberg region were the first to harvest and brew rooibos, climbing the mountains to gather the wild plants. Commercial cultivation began in the early 1900s, and today rooibos supports farming communities across the region. It remains one of the few teas in the world with a true single origin.

Flavor: smooth, sweet, and forgiving

Rooibos brews to a rich amber-red with a naturally sweet, mellow taste: think honey, vanilla, and warm wood, with none of the bitterness or astringency that can come from over-steeped black or green tea. It is nearly impossible to brew badly, which makes it perfect for beginners. It also takes beautifully to additions like apple, cinnamon, citrus, and vanilla.

Why it owns the evening

Because rooibos has zero caffeine, it is the rare "real tea experience" you can drink at 9pm without consequence. It is rich in antioxidants including aspalathin, a compound unique to rooibos that researchers continue to study. Traditionally it is enjoyed as a calming, hydrating nightcap, and its smooth sweetness satisfies dessert cravings without the dessert.

How to brew it

Use one tablespoon per cup, pour over freshly boiled water, and steep 5 to 7 minutes. Rooibos only gets better with a longer steep. Serve plain, with a splash of milk, or over ice.
